Alligator Creole
This is an excellent way to use up leftover alligator, but if you are out of alligator, then chicken will do.
Ingredients
- 1 (2 pound) alligator tail
- 2 large green bell peppers, finely chopped
- 6 stalks celery, finely chopped
- 1 large onion, finely chopped
- 4 cloves garlic, minced
- 1/4 cup vegetable oil
- 1 large can tomato sauce
- 1 teaspoon Tabasco
- 1 tablespoon Worcestershire sauce
- Red pepper, to taste
Instructions
- Carefully remove all fat from alligator meat. Cut into bite-size pieces and set aside.
- Saute pepper, onion, celery and garlic in oil until tender.
- Add all remaining ingredients except the meat and simmer in a covered pot for 30 minutes.
- Add alligator meat and continue cooking for 1 1/2 hours.
- Add salt and red pepper to taste.
- Allow to cool to room temperature, then reheat and serve over rice.
