Alligator Creole

This is an excellent way to use up leftover alligator, but if you are out of alligator, then chicken will do.

Alligator Creole recipe

Ingredients

  • 1 (2 pound) alligator tail
  • 2 large green bell peppers, finely chopped
  • 6 stalks celery, finely chopped
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1/4 cup vegetable oil
  • 1 large can tomato sauce
  • 1 teaspoon Tabasco
  • 1 tablespoon Worcestershire sauce
  • Red pepper, to taste

Instructions

  1. Carefully remove all fat from alligator meat. Cut into bite-size pieces and set aside.
  2. Saute pepper, onion, celery and garlic in oil until tender.
  3. Add all remaining ingredients except the meat and simmer in a covered pot for 30 minutes.
  4. Add alligator meat and continue cooking for 1 1/2 hours.
  5. Add salt and red pepper to taste.
  6. Allow to cool to room temperature, then reheat and serve over rice.
