Cajun Crawfish Omelet
Crawfish tails get the royal treatment with a variety of spices, cheese, green onion and mushrooms.
Ingredients
- 2 large eggs
- Splash of water
- 1 drop hot sauce
- Salt and pepper, to taste
- 1 tablespoon butter
- 1 dozen peeled and cooked crawfish tails
- Green part of 1 green onion, sliced
- 3 button mushrooms, thinly sliced
- 1/4 teaspoon Cajun seasoning
- 1/4 cup shredded mild Cheddar cheese
- Chopped parsley
Instructions
- In a mixing bowl, combine eggs and a splash of water, then scramble.
- Add hot sauce, salt and pepper to taste.
- In a small skillet, heat butter until melted over medium heat.
- Add eggs and cook until bottom layer is done, approximately 4 minutes.
- Add crawfish, onion, mushrooms, Cajun seasoning and cheese to one side.
- When eggs are fully cooked and cheese has melted, fold the omelet over and serve topped with parsley.
