Mardi Gras Jambalaya

Ingredients

  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup green onion, diced
  • 1 cup tomatoes, diced
  • 1 tablespoon garlic, minced
  • 1/4 tablespoon red pepper
  • Pinch of salt
  • 1 cup smoked sausage, sliced
  • 1 cup chicken, cooked and diced
  • 1/2 pound raw shrimp, peeled
  • 1 teaspoon olive oil
  • 4 cups chicken stock
  • 2 cups uncooked rice

Instructions

  1. Sauté all ingredients in olive oil except the chicken stock and rice.
  2. Add chicken stock and rice; cook slowly until rice is done.
  3. Serve hot.
