Cajun and Creole Recipes
Mardi Gras Jambalaya
Yield: 4 to 6 servings
Ingredients
- 1/2 cup onion, diced
- 1/2 cup celery, diced
- 1/2 cup bell pepper, diced
- 1/2 cup green onion, diced
- 1 cup tomatoes, diced
- 1 tablespoon garlic, minced
- 1/4 tablespoon red pepper
- Pinch of salt
- 1 cup smoked sausage, sliced
- 1 cup chicken, cooked and diced
- 1/2 pound raw shrimp, peeled
- 1 teaspoon olive oil
- 4 cups chicken stock
- 2 cups uncooked rice
Instructions
- Sauté all ingredients in olive oil except the chicken stock and rice.
- Add chicken stock and rice; cook slowly until rice is done.
- Serve hot.
