Taco Ranch Chicken Chili
This is great with plain nonfat yogurt stirred in before eating.
Ingredients
- 4 or 5 boneless, skinless chicken breasts
- 1 onion, chopped
- 1 package taco seasoning mix
- 1 envelope Hidden Valley Ranch mix
- 1 can black beans*, drained and rinsed
- 1 bag frozen corn
- 1 can Ro*Tel
- 1 large can diced tomatoes
Instructions
- Put all ingredients into slow cooker.
- Cook on HIGH for 4 to 5 hours or on LOW for 8 hours.
- Shred chicken right in the slow cooker
- Garnish with fresh cilantro, if desired.
Notes
* Kidney beans may be substituted.
