Taco Ranch Chicken Chili

Taco Ranch Chicken Chili

This is great with plain nonfat yogurt stirred in before eating.

Ingredients

  • 4 or 5 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 1 package taco seasoning mix
  • 1 envelope Hidden Valley Ranch mix
  • 1 can black beans*, drained and rinsed
  • 1 bag frozen corn
  • 1 can Ro*Tel
  • 1 large can diced tomatoes

Instructions

  1. Put all ingredients into slow cooker.
  2. Cook on HIGH for 4 to 5 hours or on LOW for 8 hours.
  3. Shred chicken right in the slow cooker
  4. Garnish with fresh cilantro, if desired.

Notes

* Kidney beans may be substituted.
