Sour Cream Chicken Cornbread Casserole

Use cooked, shredded chicken for this delicious, easy-to-make casserole using Jiffy corn muffin mix.

Ingredients

Casserole

  • 2 cups cooked shredded chicken (deli chicken is good for this)
  • 1/2 cup sour cream
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1 tablespoon minced garlic
  • 1 cup shredded Cheddar cheese
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Topping

  • 1 box Jiffy corn muffin mix
  • 3 tablespoons melted butter
  • 1 egg
  • 1 can cream-style corn

Instructions

Casserole

  1. Heat oven to 350 degrees F. Spray a 9 x 13 inch baking dish with nonstick spray.
  2. Combine all casserole ingredients.
  3. Add the mixture to the prepared baking dish.

Topping

  1. Stir Topping ingredients together well. Spread evenly over the top of the chicken mixture.
