Taco Filling

Taco Filling uses high protein, high fiber, gluten-free TVP.

Yield: enough for 8 tacos

Ingredients

  • 7/8 cup boiling water
  • 1 cup granular TVP
  • 12 ounces tomato sauce
  • 1 tablespoon chili powder*
  • 1 1/2 teaspoons garlic powder*
  • 1 tablespoon granulated sugar*

For serving

  • Chopped tomato
  • Shredded lettuce
  • Shredded Cheddar cheese
  • Diced onion
  • 8 taco shells
  • Salsa (optional)

Instructions

  1. Pour the boiling water over the TVP and set aside.
  2. In a saucepan, mix tomato sauce, chili powder, garlic and sugar; simmer for 10 minutes.
  3. Add the TVP and cook for another 10 minutes.
  4. Serve in hard or soft taco shells topped with tomato, lettuce, cheese, onion, and salsa, if desired.
  5. Notes

    * Or substitute 2 teaspoons Taco Seasoning.
