Fresh Apple Coffee Cake

Fresh apples make this coffee cake moist and tender. Serve warm or cooled with a dusting of confectioners' sugar.

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups cored, peeled and diced sweet apple
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 cup chopped nuts
  • Confectioners' sugar


  1. Sift flour, salt and baking soda together; set aside.
  2. Place apple in a medium-size bowl.
  3. Break egg over apples.
  4. Add oil, sugar, cinnamon, nutmeg and nuts; blend thoroughly.
  5. Stir dry mixture into apple mixture just until flour is moist. (The mixture will seem dry.)
  6. Spread in a greased 8-inch square pan.
  7. Bake in a 350 degrees F oven for 30 to 35 minutes until a wooden pick comes out clean.
  8. Turn out onto plate and sprinkle with confectioners' sugar.


* Use golden or red delicious apples.
