Egg Muffins
Ingredients
- Eggs or Egg Beaters
- Vegetables/Mix-ins of your choice (mushrooms, bell pepper, broccoli, onions, etc.)
Instructions
- Pour beaten eggs or Egg Beaters into a greased muffin pan; fill halfway. Add toppings directly into eggs.
- Bake at 375 degrees F for 30 minutes.
- Place cooled muffins into plastic bags and refrigerate.
- To warm them up, place one or two in the microwave for about 30 seconds.
Notes
These can also be eaten cold.
