Sausage and Egg Burrito

Ingredients

  • 12 eggs
  • 1 1/2 pounds medium ground sausage
  • 12 medium-size flour tortillas
  • 1/2 pound mild cheese, grated
  • Favorite salsa
  • 1 (4 ounce) can green chiles, chopped

Instructions

  1. Cook sausage until brown, then drain off all fat. Return sausage to pan.
  2. In bowl, whip all eggs and add to skillet with cooked sausage. Cook until mixture is done.
  3. Heat tortillas in microwave or with a little butter in skillet.
  4. Have everyone put a generous amount of eggs and sausage on their tortilla and add cheese, salsa and green chiles.
