Banana Nut Bread

  • 1 (18.25 ounce) box yellow cake mix*
  • 4 ounces cream cheese, softened
  • 2 eggs
  • 3 medium bananas, peeled and mashed
  • 3/4 cup chopped nuts


  1. Heat oven to 350 degrees F. Grease two 8 1/2 x 4 1/2 inch loaf pans.
  2. Put cream cheese and eggs into small mixer bowl and blend at low speed until smooth.
  3. Add mashed bananas and mix well.
  4. Put half the dry cake mix into a large bowl; add banana mixture and beat until blended.
  5. Add remaining cake mix and nuts; mix just until blended.
  6. Divide batter evenly between the pans.
  7. Bake for 35 to 45 minutes or until a wooden pick inserted in the center comes out clean.
  8. Cool for 20 minutes in the pans.
  9. Remove from pans and cool on rack.


* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
