Cinnamon Nut Bread

  • 1 (18.25 ounce) box yellow pudding cake mix*
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 teaspoons cinnamon
  • 1/2 cup chopped pecans


  1. Grease and flour 2 loaf pans.
  2. Prepare cake mix according to package directions, but add the almond and vanilla extracts.
  3. Mix together the sugar, cinnamon and nuts.
  4. Pour half of cake mix into prepared loaf pans.
  5. Sprinkle some of the sugar, cinnamon and nut mixture on top; then pour on the remaining cake mix.
  6. Sprinkle remaining cinnamon, sugar and nut mix on top of cake.
  7. Swirl through the cake mix with a knife.
  8. Bake according to package directions.


* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
