Kentucky Cream Cake

Ingredients

Cake

  • 1/2 cup shortening
  • 1/2 cup margarine
  • 2 cups granulated sugar
  • 5 egg yolks
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup coconut
  • 2/3 cup chopped nuts (pecans)
  • 5 egg whites, beaten

Kentucky Cream Cake Frosting

  • 8 ounces cream cheese
  • 4 tablespoons margarine
  • 1 (1 pound) box powdered sugar
  • 1 teaspoon vanilla extract
  • Chopped nuts (pecans)

Instructions

  1. Cake: Cream shortening, margarine and sugar.
  2. Add egg yolks, one at a time, beating after each addition.
  3. Add flour and baking soda, alternately with buttermilk.
  4. Add vanilla extract, coconut and nuts.
  5. Beat egg whites until stiff and fold into batter.
  6. Bake in 2 or 3 (8 x 8 x 2-inch) layers in preheated 350 degree F oven for 35 to 40 minutes.
  7. Kentucky Cream Cake Frosting: Cream the cream cheese, margarine, sugar and vanilla extract.
  8. Frost cake with this and sprinkle with chopped nuts.
