This is a very moist cake.
- 1 cup boiling water
- 1 cup dates, chopped
- 1/2 teaspoon baking soda
- 1 cup granulated sugar
- 1 cup mayonnaise
- 2 cups all-purpose flour
- 1 cup walnuts, chopped
- Pour boiling water over dates and baking soda. Let cool.
- Mix sugar with mayonnaise, then add dates, flour and walnuts.
- Bake in 2 (8- or 9-inch) round cake pans at 350 degrees F for approximately
30 minutes or until top springs back when lightly touched.
- Frost with confectioners' sugar frosting or cream cheese frosting.
