Mayonnaise Cake

Ingredients

  • 1 cup boiling water
  • 1 cup dates, chopped
  • 1/2 teaspoon baking soda
  • 1 cup granulated sugar
  • 1 cup mayonnaise
  • 2 cups all-purpose flour
  • 1 cup walnuts, chopped

Instructions

  1. Pour boiling water over dates and baking soda. Let cool.
  2. Mix sugar with mayonnaise, then add dates, flour and walnuts.
  3. Bake in 2 (8- or 9-inch) round cake pans at 350 degrees F for approximately 30 minutes or until top springs back when lightly touched.
  4. Frost with confectioners' sugar frosting or cream cheese frosting.
