Pineapple Candy



  • 3 cups granulated sugar
  • 1 cup crushed pineapple with juice
  • 24 marshmallows
  • Pinch of salt
  • 1 teaspoon vanilla extract
  • 2 cups broken pecans


  1. Boil sugar with pineapple until it forms a hard ball in water (235 degrees F).
  2. Remove from heat and beat well. Add marshmallows, salt and vanilla extract and beat until cool. Stir in nuts.
  3. Drop by teaspoons onto wax paper.

Makes 4 to 5 dozen.
