Pineapple Candy
Yield: 4 to 5 dozen
Ingredients
- 3 cups granulated sugar
- 1 cup crushed pineapple with juice
- 24 marshmallows
- Pinch of salt
- 1 teaspoon vanilla extract
- 2 cups broken pecans
Instructions
- Boil sugar with pineapple until it forms a hard ball in water (235 degrees F).
- Remove from heat and beat well. Add marshmallows, salt and vanilla extract and beat until cool. Stir in nuts.
- Drop by teaspoons onto wax paper.
