  • 2 1/2 pounds ground almonds*
  • 2 1/2 pounds confectioners' sugar
  • 1/2 to 1 teaspoon almond extract



  1. Mix ground almonds with confectioners' sugar and almond extract. Moisten with rosewater, a little at a time, being careful not to get the mixture too wet. Mix thoroughly and knead to a consistency suitable for modeling with the hands.

* If using bitter almonds, do not use almond extract.
