Milk-Free Cocoa Fudge

Ingredients

  • 3 cups granulated sugar
  • 2/3 cup cocoa
  • 1/8 teaspoon salt
  • 1 1/2 cups mocha mix
  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • 1 cup nuts (optional)

Instructions

  1. Over medium heat bring all ingredients except butter and vanilla extract to a boil. Continue boiling until mixture reaches 234 degrees F or to soft-ball stage.
  2. Remove from heat.
  3. Add butter and vanilla extract. DO NOT STIR.
  4. Cool to 110 degrees F.
  5. Add nuts. Beat until fudge thickens.
  6. Pour into buttered pan.
  7. Cool.
