Camelback Inn Anniversary Bars

  • 1 cup butter, soft
  • 1/2 cup granulated sugar
  • 2 1/2 cups brown sugar
  • 4 eggs, separated
  • 2 cups all-purpose flour
  • 24 ounces semisweet chocolate chips
  • 1 tablespoon water
  • 1 tablespoon vanilla extract
  • Dash of salt


  1. Cream butter with white sugar and 1/2 cup of the brown sugar. Add 2 egg yolks, flour, vanilla extract and a dash of salt. Mix well. Pat evenly on bottom of buttered and floured 16 x 8 inch baking dish. Sprinkle with chocolate chips.
  2. Beat 4 egg whites until stiff enough to hold a peak. Slowly beat in the remaining brown sugar. When glossy and smooth, spread over chips. Bake for 30 to 35 minutes in oven preset to 350 degrees F.
  3. Cut into small squares.
