Cracker Barrel Old Country Store Meatloaf

Cracker Barrel Meatloaf



  • 2 pounds ground beef
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 2 large eggs
  • 3/4 cup milk
  • 25 Ritz crackers, crushed into crumbs
  • 1/2 cup shredded Cheddar cheese
  • Salt and pepper to taste


  • 1/2 cup ketchup
  • 1/2 cup brown sugar (packed)
  • 1 teaspoon Dijon mustard


  1. Heat the oven to 350 degrees F.


  1. In a mixing bowl,combine the ground beef, onion, bell pepper, eggs, milk, cracker crumbs, shredded cheese, salt and pepper to taste.
  2. Form the mixture into a loaf shape, and place it in the center of a 9 x 13 inch baking dish.
  3. Bake for 35 minutes.
  4. While meatloaf is baking, make the Topping.
  5. Remove from oven, and spread half of the Topping over the top.
  6. Return the meatloaf to the oven and bake for another 15 minutes.
  7. Remove from the oven again, and spread the other half of the Topping on top of the meatloaf.
  8. Bake for another 10 minutes; serve.


  1. Topping: In a bowl, combine the ketchup, brown sugar and mustard until well blended.
