El Torito Vegetable Mix
Ingredients
- 1 cup corn kernels
- 1 cup diced zucchini
- 1/2 cup diced yellow onions
- 1/2 cup diced tomatoes
- 1/2 cup diced roasted Anaheim chiles
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- 2 cloves fresh garlic, chopped fine
- 1/2 teaspoon fresh chopped oregano
- 1/2 tablespoon chopped fresh epazote*
Instructions
- Place ingredients in suitable mixing bowl and mix well.
- Keep refrigerated and sauté when needed.
Notes
* If you can't find epazote, just omit this ingredient.
