El Torito Vegetable Mix

Ingredients

  • 1 cup corn kernels
  • 1 cup diced zucchini
  • 1/2 cup diced yellow onions
  • 1/2 cup diced tomatoes
  • 1/2 cup diced roasted Anaheim chiles
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 cloves fresh garlic, chopped fine
  • 1/2 teaspoon fresh chopped oregano
  • 1/2 tablespoon chopped fresh epazote*

Instructions

  1. Place ingredients in suitable mixing bowl and mix well.
  2. Keep refrigerated and sauté when needed.

Notes

* If you can't find epazote, just omit this ingredient.
