Howard Johnson's Fried Clams

Howard Johnson’s (HoJo's) is an American chain of hotels, motels and formerly restaurants, located primarily throughout the United States and Canada. Founded by Howard Johnson, it was the largest restaurant chain in the U.S. throughout the 1960s and 1970s, with more than 1,000 combined company-owned and franchised outlets.

Howard Johnson's Fried Clams

Ingredients

  • 1 cup evaporated milk
  • 1 cup whole milk
  • 1 egg
  • 1/4 teaspoon vanilla extract
  • Dash salt and pepper
  • 4 dozen freshly shucked clams
  • 1 cup cake flour
  • 1 cup yellow cornmeal
  • Oil for frying

Instructions

  1. Combine evaporated milk and whole milk, egg, vanilla extract, salt and pepper.
  2. Soak clams in liquid and then dredge in combination of cake flour and cornmeal, fluffing them in the flour mixture for light but thorough coverage. Shake off excess flour and fry in oil.
  3. Serve with French fries, tartar sauce, coleslaw, homemade rolls and butter.
