Old Town Tortilla Factory Kahlua Tortillas
with Cinnamon Maple Butter

Ingredients

Tortillas

  • 8 3/4 cups all-purpose flour
  • 1 cup lard
  • 1 tablespoon salt
  • 1 1/2 tablespoons granulated sugar
  • 1 1/2 tablespoons baking powder
  • 2 cups water
  • 3/4 cup Kahlua liqueur

Cinnamon Maple Butter

  • 1 pound unsalted butter, softened to room temperature
  • 3 tablespoons ground cinnamon
  • 1 1/2 tablespoons granulated sugar
  • 1/4 cup maple syrup

Instructions

  1. Tortillas: Mix flour, lard, salt, sugar and baking powder in mixer. Add 1 cup of the water and Kahlua. Mix. Add more water as needed for desired consistency. Mix on low speed for 7 minutes.
  2. Roll dough into about 40 balls.
  3. Place one ball on a floured surface. Roll in one direction with medium pressure. Flip tortilla and roll in other direction.
  4. Cook over medium heat for 20 seconds. Flip and cook opposite side.
  5. Repeat with remaining dough balls.
  6. Serve with Cinnamon Maple Butter.
  7. Cinnamon Maple Butter: Mix all ingredients. Place in parchment paper and mold to desired shape.
  8. Refrigerate to harden.
  9. Serve on top of tortillas.

Makes about 40 tortillas; Cinnamon Maple Butter makes about 32 servings (1 tablespoon each).
