Potato Chip Encrusted Flounder
- 2 pounds medium flounder filets
- 3 cups potato chips, crumbled
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup milk
- 1/2 cup vegetable oil
- Dredge flounder in flour. Then dip in egg wash (eggs and milk combination), then
place in potato chip crumbs.
- In a large sauté pan over medium heat add oil. Add flounder to pan and cook until
golden brown. Flip, then finish in a 350 degree F oven for 6 to 7 minutes.
- Serve immediately.
