Outback Steakhouse Alice Springs Chicken

Ingredients
- 4 boneless skinless chicken breasts, 1/2-inch thick
- 1 teaspoon McCormick's Season All (or more if needed)
- 6 slices bacon, sliced in half
- Honey mustard
- 1 cup sliced mushrooms, drained
- 3 cups shredded Colby or Monterey Jack cheese
Instructions
- Rub chicken breasts with Seasonal All and set aside to marinate for 1 hour.
- While the breasts are marinating, fry bacon crisp and drain.
- Sauté chicken breasts over medium heat in a large cast iron skillet with just enough oil to prevent sticking. Cook on both sides until a slight golden color and cooked in the middle but not dry.
- Spread chicken breasts with honey mustard, cover with a layer of mushrooms, three pieces of bacon and then sprinkle with shredded cheese, making sure that all chicken is covered with cheese.
- Bake at 350 degrees F for about 15 minutes or until cheese melts.
- Sprinkle with parsley, and serve with extra honey mustard on the side.
Notes
If you do not have a large ovenproof skillet, remove the chicken breasts from the skillet to a 9 x 13 inch baking pan, then proceed to step 4.
