Beef Chow Mein

Ingredients

  • 1 (2 pound) beef sirloin or rump roast, trimmed of all fat and sliced thin
  • Dash of salt
  • Dash of pepper
  • 1/2 teaspoon minced garlic
  • 2 1/2 teaspoons granulated sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon black pepper
  • 1 teaspoon chopped garlic
  • 4 teaspoons fish sauce (or soy sauce)
  • 1 cup broccoli florets
  • 1/4 cup thinly sliced carrots
  • 2 small mushrooms, thinly sliced
  • 1/4 cup thinly sliced bamboo shoots
  • 4 or 5 snow peas, sliced
  • 1/4 cup sliced celery
  • 1/2 cup thinly sliced onion
  • 1 cup sliced Napa cabbage
  • 2 to 3 teaspoons oyster sauce
  • 2 cups hot cooked rice

Instructions

  1. Place sliced beef in a small bowl.
  2. Add dash of salt, dash of pepper and 1/2 teaspoon minced garlic.
  3. Refrigerate for 2 hours.
  4. In a small bowl, combine next 5 ingredients. Set aside.
  5. Heat skillet or wok over high heat. Stir-fry beef until cooked throughout.
  6. Add next 6 ingredients. Stir and shake pan constantly for 2-3 minutes more or until vegetables just start to become aromatic.
  7. Blend in fish sauce mixture.
  8. Add onion, cabbage and oyster sauce. Continue to stir-fry approximately 1 minute or until crisp-tender.
  9. Serve over hot rice.
