Rinconsito Del Mar Mexican Shrimp Cocktail
Yield: 1 serving
Ingredients
- 30 to 35 raw shrimp
- 1 can tomato paste
- 1-2 tomatoes
- 1 onion
- 1 handful cilantro
- 1-2 avocados, chopped
- 1 cucumber, skinned and chopped
- 3 raw oysters
- Garnish: 2 shrimp, wrapped in bacon, secured with toothpick and fried
- On the side: Ketchup, hot sauce, crackers, fresh lemon wedges
Instructions
- Boil the shrimp in enough water to cover. Remove shrimp; reserve shrimp water. To the water, add salt and pepper to taste and a bit of tomato paste to color water.
- Place shrimp in container and mix in desired amount of chopped tomatoes, onions, cilantro, avocado and cucumbers.
- Place shrimp mixture in a huge margarita glass and top with two bacon-wrapped fried shrimp secured with a wooden pick.
- Serve with 3 raw oysters on the side, and offer ketchup, hot sauce, crackers and lemon as garnish.
