Ruth's Chris Steak House Sweet Potato Casserole

Ingredients

Topping

  • 1 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 cup chopped pecans
  • 1/4 cup butter, melted

Sweet Potato Mixture

  • 3 cups mashed sweet potatoes (drained if using canned)
  • 1 cup sugar
  • 1/2 teaspoon kosher or sea salt
  • 1 teaspoon vanilla extract
  • 2 eggs, well beaten
  • 1/2 cup butter, melted

Instructions

Topping

  1. Combine brown sugar, flour, nuts and butter in mixing bowl. Set aside.
  2. Heat oven to 350 degrees F. Butter a baking dish.

Sweet Potato Mixture

  1. Combine sweet potatoes, sugar, salt, vanilla extract, eggs and butter in a mixing bowl. Mix thoroughly.
  2. Pour mixture into prepared baking dish.
  3. Sprinkle the surface of the sweet potato mixture evenly with the topping.
  4. Bake for 30 minutes.
  5. Allow to set at least 30 minutes before serving.
