Shalimar Indian Restaurant Gajar Halva
Yield: 8 servings
Ingredients
- 5 cups milk
- 1 pound peeled, grated carrots (5 cups)
- 1 (14 ounce) can sweetened condensed milk
- 1 to 2 tablespoons granulated sugar
- 2 teaspoons melted clarified butter, or ghee (see note)
- 4 tablespoons cashews
- 4 tablespoons raisins
Instructions
- Mix milk and grated carrots in a medium saucepan. Cook, uncovered, over medium-low heat, stirring occasionally, until milk boils, then dries up (about an hour).
- Add sweetened condensed milk and sugar to taste and continue to cook until mixture is again almost dry, another 1/2 hour or so.
- Add melted butter and cook for 10 minutes.
- Garnish with cashews and raisins.
- Serve hot.
