Fruited Christmas Shortbread Cookies
Yield: 36 servings
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon cream of tartar
- 1 1/2 cups confectioners' sugar
- 1 (9 ounce) box Nonesuch mincemeat
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 cup butter, softened
- 1 egg
Instructions
- Heat oven to 375 degrees F.
- Combine flour, baking soda and cream of tartar.
- In a large bowl, beat butter and sugar until fluffy.
- Add egg.
- Stir in vanilla extract and crumbled mincemeat.
- Add dry ingredients. Mix well. Batter will be stiff.
- Roll into 1 1/4 inch balls.
- Place on ungreased cookie sheet, flatten slightly.
- Bake for 10 to 12 minutes or until lightly brown.
- Cover with a glaze of confectioners' sugar, milk and vanilla extract while still warm.
