Fruited Christmas Shortbread Cookies



  • 2 1/2 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 1/2 cups confectioners' sugar
  • 1 (9 ounce) box Nonesuch mincemeat
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 1 egg


  1. Heat oven to 375 degrees F.
  2. Combine flour, baking soda and cream of tartar.
  3. In a large bowl, beat butter and sugar until fluffy.
  4. Add egg.
  5. Stir in vanilla extract and crumbled mincemeat.
  6. Add dry ingredients. Mix well. Batter will be stiff.
  7. Roll into 1 1/4-inch balls.
  8. Place on ungreased cookie sheet, flatten slightly.
  9. Bake for 10-12 minutes or until lightly brown.
  10. Cover with a glaze of confectioners' sugar, milk and vanilla extract while still warm.

Yield: 36 servings
