Ginger Cream Bars

Ingredients

Bars

  • 1 cup granulated sugar
  • 1 cup butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground cloves
  • 1 tablespoon ground ginger
  • 2 eggs
  • 1/2 cup molasses
  • 1 cup hot coffee

Frosting

  • 1/2 cup butter, softened
  • 3 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract

Instructions

Bars

  1. In a medium bowl, cream sugar and butter.
  2. Sift together flour, salt, baking soda and spices; add to creamed mixture.
  3. Add eggs, one at a time, beating well after each addition.
  4. Blend in molasses, then the coffee.
  5. Spread in a 15 x 10 inch baking pan.
  6. Bake at 350 degrees F for 20 to 25 minutes.
  7. Cool.

Frosting

  1. Cream butter and cream cheese; add sugar and vanilla extract and beat until fluffy. Spread over bars.
