Gingerbread Men

Ingredients

• 1/2 cup + 1 tablespoon shortening
• 1/2 cup brown sugar
• 2 eggs
• 1 small box butterscotch instant pudding mix
• 1 1/2 cups all-purpose flour
• 1 1/2 teaspoons ginger
• 1/2 teaspoon cinnamon
• 1/2 teaspoon baking soda

Instructions

1. Heat oven to 350 degrees F. Grease a cookie sheet.
2. Cream the shortening and sugar; add eggs and mix well.
3. Add dry pudding mix and flour and spices. Mix well.
4. Roll the dough to about 1/4 inch thick and cut with a gingerbread man cookie cutter.
5. Bake on prepared cookie sheet for 10 to 12 minutes.
