Heavenly Mixed Greens with Fruit

This refreshing, colorful salad is a natural for holiday meals or brunches. Star-shaped jicama pieces add a festive look to this dazzling salad, but it'll be just as tasty with simple jicama cubes or sticks.

Heavenly Mixed Greens

Yield: 12 servings

Ingredients

  • 1/2 cup orange juice
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 1 medium jicama, cut into 1/4 inch slices
  • 6 oranges, peeled and sliced
  • 6 kiwifruit, peeled and sliced
  • 8 cups bite size pieces salad greens
  • 1/2 cup dried cranberries

Instructions

  1. To make dressing, in small bowl, mix orange juice, honey and cinnamon until well blended.
  2. Cut jicama into star shapes using small star-shaped cookie cutter.
  3. In large serving bowl, place jicama stars, oranges and kiwifruit.
  4. Add salad greens and dressing; toss to mix. Sprinkle with cranberries.

Notes

Variation: Toss chopped walnuts or pecans into this salad along with the dried cranberries for Nutty Mixed Greens with Fruit.
