Pistachio Mallow Salad

Yield: about 16 servings


  • 1 small box Jell-O pistachio flavor instant pudding and pie filling
  • 1 (20 ounce) can crushed pineapple in juice, undrained
  • 1/2 cup walnuts, chopped
  • 3 1/4 cups miniature marshmallows, divided
  • 2 containers Cool Whip
  • Maraschino cherries with stems, for garnish, if desired


  1. Stir pudding mix, pineapple with juice, nuts and 1 cup marshmallows in a large bowl until blended.
  2. Gently stir in 1 container Cool Whip.
  3. Mix remaining container Cool Whip and 2 cups of marshmallows in separate bowl; reserve 1/2 of the mixture for garnish.
  4. Spoon 1/2 of the pudding mixture into a large serving bowl.
  5. Top with remaining marshmallow mixture and remaining pudding mixture.
  6. Garnish with reserved marshmallow mixture, marshmallows and maraschino cherries.
  7. Refrigerate until ready to serve.
