Hunter's Sauce for Wild Duck

  • 1 cup red currant jelly
  • 1 teaspoon dry mustard
  • 1/2 teaspoon Worcestershire sauce
  • Juice of 2 lemons
  • 1 tablespoon prepared horseradish sauce
  • 1 cup dry red wine


  1. Combine ingredients in a small, heavy saucepan and bring to a boil. Simmer slowly until slightly thickened.
