Vidalia Onion Mayonnaise
Serve as a sandwich spread or with shrimp or fish.
- 1 large Vidalia onion, coarsely chopped
- 1 tablespoon butter
- 1 cup mayonnaise
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Sauté onion in butter in large skillet until wilted and golden brown; let cool
- Combine onion, mayonnaise, garlic, salt and pepper in large bowl and mix completely.
Yield: 2 cups
