Cherry Coconut Bars
Ingredients
- 1 cup sifted all-purpose flour
- 1/2 cup butter
- 3 tablespoons confectioners' sugar
- 2 eggs, slightly beaten
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 3/4 cup chopped nuts
- 1/2 cup coconut
- 1/2 cup quartered maraschino cherries
Instructions
- With hands mix first 3 ingredients until smooth and spread thinly in an 8 inch square pan.
- Bake for 25 minutes at 350 degrees F.
- Stir remaining ingredients into eggs. Spread over top of warm baked pastry and bake 30 minutes longer at 350 degrees F.
- Cool and cut into bars.
