Cashew Blondies



  • 2 eggs
  • 2/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 (1 ounce) squares white baking chocolate, melted and cooled
  • 1/3 cup butter or margarine, melted
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 to 1 cup chopped salted cashews or pecans


  1. In a mixing bowl, beat eggs, sugar and vanilla extract on medium speed for 1 minute.
  2. Beat in chocolate and butter.
  3. Combine flour, baking powder and salt; gradually add to chocolate mixture.
  4. Stir in cashews.
  5. Spread into a greased 9-inch square baking pan.
  6. Bake at 350 degrees F for 25 to 30 minutes or until a wooden pick inserted near the center comes out clean.
  7. Cool on a wire rack.
  8. Cut into bars.

Yields 2 dozen.
