Toffee Blondies

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (at room temperature)
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup plus 2 tablespoons coarsely chopped pecans
  • 1/2 cup toffee chips

Instructions

  1. Heat oven to 350 degrees F. Coat a 13 x 9-inch baking pan with nonstick cooking spray.
  2. Stir together flour, baking powder and salt in small bowl.
  3. Beat butter with both sugars in bowl until fluffy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Beat in vanilla extract, then flour mixture.
  6. Fold in 1/4 cup pecans and toffee chips. Pour into pan.
  7. Sprinkle with remaining chopped pecans.
  8. Bake for 25 to 30 minutes or until a wooden pick inserted in center comes out clean.
  9. Cool in pan on rack before cutting.
