Using cake flour results in a lighter texture and more tender crumb.
For every 1 cup of flour called for in the recipe, remove 2 tablespoons of the all-purpose flour and replace with 2 tablespoons cornstarch.
Sift the mixture to mix it well.
1 1/2 cups cake flour - remove 3 tablespoons all-purpose flour and replace
with 3 tablespoons cornstarch
2 cups cake flour - remove 4 tablespoons
all-purpose flour and replace with 4 tablespoons cornstarch
