Peppermint Pattie Cookies

Yield: about 3 dozen cookies

Ingredients

  • 1/2 cup butter, melted
  • 1 cup granulated sugar
  • 1 egg
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon peppermint extract
  • 8 ounces chocolate flavored candy coating (bark)
  • 1 (6 ounce) package semisweet chocolate chips

Instructions

  1. Heat oven to 350 degrees F. Grease two cookie sheets.
  2. Beat butter, sugar and egg together.
  3. Combine flour and baking soda; add to butter mixture. Stir in peppermint extract. Drop by teaspoonsful onto prepared cookie sheets.
  4. Bake for 8 to 10 minutes.
  5. Remove from cookie sheets and cool on wire racks.
  6. Melt candy coating and chocolate chips in the top of a double boiler over simmering water. Drop each cookie into chocolate to coat. Lift out with a fork, wiping excess chocolate from the bottom of cookie.
  7. Place on wax paper and allow chocolate to harden.
