Marshmallow Fantasies

Ingredients

Base

  • 3/4 cup butter
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar

Topping

  • 2 envelopes gelatine
  • 1/2 cup cold water
  • 2 cups granulated sugar
  • 1/2 cup cold water
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Coconut, red and green cherries

Instructions

  1. Heat oven to 350 degrees F.
  2. Rub flour, butter and brown sugar together. Press into a greased square pan.
  3. Bake for 10 to 12 minutes. Cool.
  4. Soak gelatine in 1/2 cup cold water.
  5. Boil sugar, 1/2 cup water and softened gelatine together for 2 minutes. Cool.
  6. Beat for 2 minutes.
  7. Add vanilla extract and salt. Spread over base.
  8. Sprinkle with coconut.
  9. Decorate with pieces of red and green cherries.
  10. Place in refrigerator to set.
