Tidbits for the Cardinal






  1. Cake: Heat oven to 350 degrees F.
  2. In a large bowl beat egg whites until very stiff.
  3. In a small bowl beat yolks until lemony; add sugar and continue beating.
  4. When stiff, add slowly, by tablespoonsful, the cornstarch and cake flour.
  5. Carefully fold yolk mixture into beaten whites.
  6. Spoon into a well-buttered 8-inch square pan.
  7. Bake for 15 minutes.
  8. Turn off oven, slightly open door, and allow cake to cool in the oven.
  9. When cold, cut into 16 squares.
  10. Arrange in a serving bowl and slowly saturate with sherry.
  11. Pour hot Syrup over cake and refrigerate.
  12. Serve cold.

Syrup: Bring to a boil and cook for 5 minutes.
