Individual Peach Cheesecakes


  • 6 ounces cream cheese (two 3-ounce packages)
  • 3 tablespoons granulated sugar
  • 1 tablespoon lemon rind
  • 2 tablespoons peach preserves
  • 3 peaches
  • Whipped cream
  • 6 sponge cake dessert cups
  • Chocolate shavings (optional)


  1. Mix the cream cheese with sugar, lemon rind and peach preserves. Divide the mixture among six sponge cake dessert cups and spread in the bottom.
  2. Top each with 1/2 peach.
  3. Brush the tops with a little more peach preserves.
  4. Add a dollop of whipped cream to each.
  5. Sprinkle with shaved chocolate.
  6. Refrigerate and serve cold.
