Individual Peach Cheesecakes
Ingredients
- 6 ounces cream cheese (two 3 ounce packages)
- 3 tablespoons granulated sugar
- 1 tablespoon lemon rind
- 2 tablespoons peach preserves
- 3 peaches
- Whipped cream
- 6 sponge cake dessert cups
- Chocolate shavings (optional)
Instructions
- Mix the cream cheese with sugar, lemon rind and peach preserves. Divide the mixture among six sponge cake dessert cups and spread in the bottom.
- Top each with 1/2 peach.
- Brush the tops with a little more peach preserves.
- Add a dollop of whipped cream to each.
- Sprinkle with shaved chocolate.
- Refrigerate and serve cold.
