Hot and Spicy Pumpkin Seeds

Yield: 1 cup roasted seeds

Ingredients

  • 1 cup raw, whole pumpkin seeds, cleaned
  • 1/4 cup salt
  • 6 cups water
  • 1 tablespoon oil
  • Garlic powder to taste (optional)
  • Cayenne pepper to taste (optional)

Instructions

  1. Remove seeds from the pumpkin pulp and wash them thoroughly.
  2. In a large bowl, add 1/4 cup salt to 6 cups water.
  3. Add pumpkin seeds and let soak overnight.
  4. In the morning, drain water and lay seeds out to dry on a cookie sheet.
  5. When seeds are dry, toss them with 1 tablespoon oil until thoroughly coated.
  6. Add garlic powder and cayenne pepper or your favorite seasoning.
  7. Spread the seeds out on a cookie sheet.
  8. Bake at 350 degrees F for 30 to 60 minutes, stirring every 10 to 15 minutes while baking.
