Barbecue Chicken Cornbread Casserole
Use ground chicken for this delicious, easy-to-make casserole using Jiffy corn muffin mix.
Ingredients
Casserole
- 1 pound ground chicken
- 1 yellow onion, diced
- 1 cup barbecue sauce
- 1 (14 ounce) can tomato sauce
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 cup shredded Cheddar cheese
Topping
- 1 box Jiffy corn muffin mix
- 1 egg
- 1/3 cup milk
Instructions
Casserole
- Heat oven to 350 degrees F. Spray a medium size baking dish with nonstick spray.
- Add the ground chicken and onion to a large skillet. Break the chicken up and let it cook through.
- Stir in the barbecue sauce, tomato sauce and seasonings. Let simmer for 3 to 5 minutes stirring occasionally.
- Add the chicken barbecue mixture to the prepared baking dish. Sprinkle the cheese on top then pour the Topping over the cheese. Bake for 30 minutes.
Topping
- In a small bowl, stir together well the corn muffin mix, egg and milk.
