Barbecue Chicken Cornbread Casserole

Use ground chicken for this delicious, easy-to-make casserole using Jiffy corn muffin mix.

Ingredients

Casserole

• 1 pound ground chicken
• 1 yellow onion, diced
• 1 cup barbecue sauce
• 1 (14 ounce) can tomato sauce
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 teaspoon paprika
• 1 teaspoon onion powder
• 1 teaspoon garlic powder
• 1/2 cup shredded Cheddar cheese

Topping

• 1 box Jiffy corn muffin mix
• 1 egg
• 1/3 cup milk

Instructions

Casserole

1. Heat oven to 350 degrees F. Spray a medium size baking dish with nonstick spray.
2. Add the ground chicken and onion to a large skillet. Break the chicken up and let it cook through.
3. Stir in the barbecue sauce, tomato sauce and seasonings. Let simmer for 3 to 5 minutes stirring occasionally.
4. Add the chicken barbecue mixture to the prepared baking dish. Sprinkle the cheese on top then pour the Topping over the cheese. Bake for 30 minutes.

Topping

1. In a small bowl, stir together well the corn muffin mix, egg and milk.
