Sour Cream Chicken Cornbread Casserole
Use cooked, shredded chicken for this delicious, easy-to-make casserole using Jiffy corn muffin mix.
Yield: 12 servings
Ingredients
Casserole
- 2 cups cooked shredded chicken (deli chicken is good for this)
- 1/2 cup sour cream
- 1 can cream of chicken soup
- 1/2 cup milk
- 1 tablespoon minced garlic
- 1 cup shredded Cheddar cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Topping
- 1 box Jiffy corn muffin mix
- 3 tablespoons melted butter
- 1 egg
- 1 can cream-style corn
Instructions
Casserole
- Heat oven to 350 degrees F. Spray a 9 x 13 inch baking dish with nonstick spray.
- Combine all casserole ingredients.
- Add the mixture to the prepared baking dish.
Topping
- Stir Topping ingredients together well. Spread evenly over the top of the chicken mixture.
