LuAnn's Chocolate-Almond "Cheesecake" Dessert Cups
(no-sugar, lowfat)
This is one of the recipes I developed for the Fast Track to Fitness website where I was the recipe editor for several years.
Yield: 4 (approximately 1/2 cup) servings
Ingredients
Pudding Cups
- 16 ounces unsweetened Greek yogurt 1/2 cup lowfat or fat-free sour cream
- 1/2 cup 1% milk (or enough to obtain the consistency you like)
- 1 (1.5-ounce) package sugar-free instant chocolate pudding mix
- 1/2 teaspoon almond extract
Optional Toppings
- Sugar-free whipped topping (such as Cool Whip)
- Lightly toasted sliced almonds
Instructions
- Combine the yogurt, milk, pudding mix and almond extract in a bowl, then whisk until well-blended. Divide evenly between four small bowls. Refrigerate until set.
- Before serving, if desired, top each pudding cup with a dollop of whipped topping and a sprinkling of toasted, sliced almonds.
Notes
Although this no-sugar, low-fat dessert has no cream cheese in it, it tastes a lot like a softly set cheesecake. It's more dense than fluffy, but not as dense as traditional cheesecake.
