Easy Oven-Baked Brown Rice

This is an easy, foolproof method for preparing brown rice which yields perfect, fluffy rice every time. It is a method often demonstrated by Evelyn Kissinger, R.D., the nutrition consultant for my cookbooks, Amazing Meals I and II.

Yield: about 6 cups cooked rice; 12 (1/2 cup) servings

Ingredients

  • 4 cups water
  • 2 cups brown rice
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a baking dish, combine the water, rice and salt; cover with a tight fitting lid or aluminum foil.
  3. Bake in the preheated oven for 1 hour or until the rice is tender.
  4. Fluff rice with a fork and serve.

Notes

Each cup of uncooked rice will make about 3 cups of cooked rice. If you wish to decrease or increase the amount of cooked rice, follow this simple formula: Measure rice, double the amount of water. (For example, when using 1 cup of rice, add 2 cups of water). That's it!
