This is an easy, foolproof method for preparing brown rice which yields perfect, fluffy rice every time. It is a method often demonstrated by Evelyn Kissinger, R.D., the nutrition consultant for my cookbooks, Amazing Meals I and II.
Yield: about 6 cups cooked rice; 12 (1/2-cup) servings
Each cup of uncooked rice will make about 3 cups of cooked rice. If you wish to decrease or increase the amount of cooked rice, follow this simple formula: Measure rice, double the amount of water. (For example, when using 1 cup of rice, add 2 cups of water). That's it!
