Walk on the Beach Ambrosia Fruit Salad

I don't know just what it is about this combination of fruit; but it's one of the most refreshing fruit salads ever! We serve this adaptation of Dr. Barnard’s recipe at the vegan “Walk on the Beach” retreats, hosted by Vegan Gal, Jill Keb.

Ingredients

  • 2 oranges, peeled and chopped
  • 2 cups fresh pineapple chunks or 1 (20 ounce) can juice-pack pineapple chunks, drained)
  • 1 banana, sliced*
  • 1/4 cup flaked/shredded coconut
  • 2 to 4 tablespoons golden raisins, Craisins or dried cherries
  • 1 tablespoon frozen orange juice concentrate, thawed
  • 1/4 teaspoon almond extract

Instructions

  1. In a large bowl, combine all of the ingredients.
  2. Serve at room temperature or cover and chill.

Notes

* If salad is to be chilled and served later, do not add the banana until just before serving.
