Prime Rib Roast

Yield: 8 to 12 servings

Ingredients

  • 1 (4 to 5 pound) prime rib roast
  • 1/3 cup olive oil
  • 2 tablespoons lemon juice
  • 3 tablespoons rosemary leaves
  • 4 garlic cloves, minced
  • 1 teaspoon pepper

Instructions

  1. Place the roast in a shallow roasting pan and set aside 30 minutes to room temperature.
  2. Heat oven to 450 degrees F.
  3. Combine remaining ingredients. Rub roast with mixture.
  4. Bake for 15 minutes until the roast begins to brown.
  5. Reduce heat to 350 degrees F and continue cooking for 15 to 18 minutes per pound for a boneless roast or 26 to 32 minutes per pound for a bone-in roast.
  6. Remove from the oven and cool for 10 minutes before carving.
