Celebration Pasta


  • 2 cups fresh tortellini
  • 1 (16 ounce) bag frozen broccoli, corn and red peppers
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/2 cup fresh or canned diced tomatoes


  1. In large saucepan, cook tortellini according to package directions; drain and return to saucepan.
  2. Cook vegetables according to package directions; drain and add to tortellini.
  3. In small bowl, combine oil, salt and lemon juice.
  4. Stir in tomatoes. Stir tomato mixture into pasta and vegetables; cook over medium heat for 5 minutes or until heated through.
